Banana Green Tea Mint Ice Cream

It’s summer, summer … Summer Time! In the words of one of my favorite artists, Will Smith and one of my favorite summer songs. That song really gets me in a mood to dance, hang out at farmers markets, attend jazz in part concerts at local parks and … eat ice cream!

It gets really hot in Birmingham and unlike my hometown, Miami, there’s no beach in close driving distance. My family will sometimes make the four hour drive to head down to the panhandle of Florida to hit Panama City Beach.

One of our favorite activities is to eat ice cram . With my lifestyle being mostly plant-based, it’s hard to find many places that serve non-dairy. Usually the yogurt stores will have something that moderately satisfies my taste buds. But it’s so limited to mainly vanilla, old-fashioned vanilla and strawberry and usually full of sugar and other artificial colors and flavorings.

What I have found to be more fun and enjoyable is making my own. In my video, I show you how to make Banana Green Tea Mint Ice Cream and it only requires one piece of equipment. A food processor is all you need or a blender will work just as well. Depending on your taste for textures, you can eat it as is or put the ice cream in the freezer to firm up to scoop out into a bowl or cone.

WHAT YOU NEED:

2 ripe bananas, peeled, chopped and frozen
1/4 cup green tea, gently brewed and chilled
1/8 to 1/4 cup fresh mint, chopped

Place all ingredients in food processor or blender. Process until smooth consistency, but not overprocessed. Pour ice cream into two small mason jars. For a firmer texture, pour into a plastic container and freeze up to an hour. Enjoy!
