One of the most joyful seasons of the year for most people is summer! It is the season bursting with the beautiful colors of cherry red tomatoes, sun-kissed yellow squash, and vibrant greens from spinach and kale to zucchini and peas.
Although summers are filled with vacations, summer camps, hanging out at farmers markets, BBQs and let’s not forget, blistering heat, it can be quite taxing on your body. The risk becomes high for your body to become dehydrated which can lead to heat stroke and other heat related illnesses.

All of this hot energy calls for cooling, and in summer cooling foods should be at the forefront of our meal plan. Salads (both vegetable and fruit) make perfect sense here, with vegetables like cucumber being perfectly suited to offset the summer heat. The cooling fruits like melons also bring with them an unusually large amount of water, helping us stay hydrated in the high temperatures.

Two of summer’s ‘hottest’ cooling foods are cucumbers and peaches. Cucumbers are made up of mostly 95% water, which means eating them on a hot summer day will help you stay hydrated. And peaches, a classic, sweet and juicy summer fruit always welcomed as a cobbler, grilled or as ice cream.

I’ve combined these two to make a fresh and cooling summer salad along with basil and mint. Let me know when you give it a try.

Peach Cucumber Salad
• 2 peaches, chopped
• 1 medium cucumber, chopped
• 1/2 red onion
• 1 T. fresh basil, chopped
• 1 T. fresh mint, chopped
• 1 T. apple cider vinegar
• 2 tsp. turbinado sugar or brown sugar
• Pinch of black pepper

1. Chop the cucumbers and peaches into bite sized chunks.
2. Slice the onion into thin slices. Combine all into a bowl.
3. In a separate bowl, whisk together vinegar, sugar and black pepper. Mix in basil and mint.
Pour over salad, toss to mix well.
